Rikki’s cabbage dumplings

I hope everyone had a great Christmas noche buena! :)

Here’s a recipe for a dish that’s easy to prepare and perfect for a quick lunch or dinner. I got it from my friend, Rikki Torres, who does personalized catering for small- to medium-sized groups. Problem is, Rikki doesn’t know what to call his concoction, so I thought I’d call it Rikki’s Cabbage Dumplings for now.

Rikki’s Cabbage DumplingsIngredients for the dumplings:

  1. 5 leaves fresh cabbage
  2. 1/4 kg ground pork
  3. 1 spoon liver spread
  4. 1 egg
  5. 3 cloves garlic, minced
  6. 1/2 small carrot, minced
  7. 1/2 small red onion, minced
  8. 3 leaves celery, finely chopped
  9. salt & pepper to taste

For the stock:

  1. 2 cups water
  2. 2 Knorr beef cubes
  3. 2 stalks leeks
  4. 1/2 small carrot, chopped
  5. 1/2 small red onion, chopped
  6. ground black pepper

Mix all the ingredients (except the cabbage) for the dumplings. The raw egg is mixed in last. Then divide the filling into five patties. Simmer the cabbage leaves in boiling water for about 2 minutes. This is to make sure that the leaves don’t break apart when cooked. Wrap one cabbage leaf per patty, sealing the ends with toothpicks.

For the stock, boil water, pepper, onion, carrot, leeks and the Knorr beef cubes. When it comes to a boil, lower the heat and stir gently until the beef cubes are completely dissolved.

Simmer the dumplings in the stock for 5 to 7 minutes. They cook quickly, so please watch out.

Rikki suggests not to pour the stock over the dish after cooking. Just ladle out the carrot and leeks and decorate them around the dumplings. You can make a soy sauce dip (Kikkoman with wasabi would be the best!) for this dish. Vinegar with garlic might also be good for this. But if you ask me, it’s tasty enough as it is!

    Sounds like Rikki’s Cabbage dumplings is worth a try so I keep this menu for tonight’s dinner or maybe tomorrow. I use to make a salad version of this years ago but somehow have forgotten that piece of recipe. Well done, will visit this site now and then to update my self with whats been sizzling in Davao.
